For a more complex apple flavor, use a mix of apples, such as Granny Smith, Gala and Fuji.
- 4 large apples (about 2 lbs.) peeled, cored and cut into chunks
- 1 cup water
- ½ teas cinnamon
- Small pinch of allspice
- ½ teas fresh lemon juice
Place the apples in a large pan with the water. Cover and bring to a boil over medium-high heat. Reduce heat to medium and cook the apples until they are soft, about 20-25 minutes.
When the apples are cooked, remove only the apples to the bowl of a food processor, fitted with a metal blade, leaving any cooking liquid in the pan.
Bring the remaining liquid in the pan to a boil over high heat until it reduces to about 1 or 2 Tablespoons.
Add the reduced liquid from the pan to the food processor along with the cinnamon, allspice and lemon juice and process to desired consistency.
