Breakfast Burrito

  • 4 egg whites
  • 1 Tbl. Water
  • Pinch freshly ground black pepper
  • 1 ½ teas. extra-virgin olive oil
  • 1 (8-inch) whole wheat tortilla
  • Salsa

In a small bowl, beat egg whites with water and pepper.

Heat the olive oil in a small skillet over medium heat.  Add egg white mixture and stir slowly, scraping the bottom and sides of the pan.  Continue cooking until egg mixture reaches desired consistency.

Wrap the tortilla in foil and heat at 300 degrees until steaming (about 5 min.)

Place the egg mixture on the warmed tortilla and top with 3 Tbl. Salsa.
