Pumpkin Black Bean Turkey Chili

  • 1 Tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup chopped yellow bell pepper
  • 3 cloves garlic, minced
  • 1 ½ tsp. dried oregano leaves
  • 1 ½  tsp. ground cumin
  • 1 ½  tsp. chili powder
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 ½ cups ground, cooked turkey
  • 1 can (16 oz) canned pumpkin
  • 1 can (14 ½ oz) diced tomatoes, undrained
  • 3 cups fat-free, low sodium chicken broth

Heat 1 T. oil in large saucepan or Dutch oven over medium heat.  Add onion, yellow bell pepper and garlic, sauté 8 minutes or until soft.  Stir in oregano, cumin and chili powder.  Cook 1 minutes longer.

Stir in black beans, cooked turkey, pumpkin, tomatoes with liquid, and chicken broth.  Bring to a boil, stirring occasionally.  Reduce heat, cover and simmer 45 minutes
