Turkey Wraps with Roasted Cauliflower

  • 2 avocados
  • 1 cucumber, sliced thin, lengthwise
  • 4 whole wheat tortillas
  • *Optional: hummus
  • 8 oz. turkey breast
  • 1 red bell pepper, diced
  • 1 tomato, thinly sliced or diced
  • 1 Tbs. slivered almonds
  • Sprouts
  • Braggs amin o acid spray (optional)

Tortillas may be heated for a couple of minutes or eaten cold.

Mash avocado in a bowl to a guacamole –like consistency.

Cut cucumber in half, then slice thinly lengthwise like cheese.

Spread a thin layer of avocado mixture on tortillas in a line.

Spread a thin layer of hummus on tortilla.

Add turkey.

Sprinkle chopped veggies.

Add cucumber slices, slivered almonds and sprouts to each tortilla.

Spray lightly with Braggs, if desired.

Fold bottom of each wrap up about two inches to hold contents once rolled.

Turn sideways and roll snugly, being careful not to tear tortillas.
