Salmon Davis Jr.
(Broiled salmon steaks marinated in a spicy tomato sauce)
- 1 tsp. olive oil
- ½ cup diced red onion
- 1 clove garlic, minced
- 1 ½ cups diced plum tomatoes (fresh)
- 3 Tbsp. each ketchup and Splenda brown sugar
- 2 Tbsp. each lime juice and Dijon mustard
- 1 Tbsp. chili powder
- 2 tsp. Worcestershire sauce
- 1 tsp. paprika
- ¼ tsp. each ground cumin and cayenne pepper
- 6 salmon steaks, about 6 oz each
+Heat olive oil in a medium, non-stick saucepan over medium heat. Add onions and garlic. Cook and stir for 2 minutes, until onions begin to soften. Add all remaining ingredients except salmon. Mix well. Reduce heat to medium-low. Cover and simmer for 20 minutes. Transfer mixture to a blender or food processor and puree until smooth. Let cool.
+Arrange salmon steaks in a single layer in a glass baking dish. Pour marinade over salmon. Turn pieces to coat both sides with marinade, or brush marinade all over salmon using a pastry brush. Cover and refrigerate for 1 hour.
+Remove salmon from marinade and place on a baking sheet. Broil about 4 inches from heat source for 3 minutes. Carefully turn salmon over and broil for another 3-4 minutes, until done. Be careful not to overcook salmon, or it will be dry. Serve immediately.
