Chicken and Low Fat Goat/Feta or Blue Cheese Pizza

Serves 4

  • Veggie cooking Spray
  • 1 pound 100% whole wheat dough (you could also make a single serving on a 100% whole wheat small wrap…LaFactory Tortilla)
  • ½ cup Portobello mushrooms
  • ¼ cup of fat free pesto sauce (you may need to make it if you can’t find it bottled)
  • ¼ teaspoon freshly ground pepper
  • 1 ½-2 breast of skinless, boneless, shredded rotisserie chicken
  • ½ cup of sweet corn kernels
  • 2 ounces of low fat goat, feta or blue cheese
  • 2 Tablespoon chopped fresh basil

Preheat oven to 425. Lightly coat a round perforated pan with vegetable cooking spray or put a pizza stone in the oven while it preheats. Place dough on a lightly floured surface and roll it into a 12 in circle.  Place dough on prepared pizza pan or stone and bake for 5 minutes
