Halibut…with veggies

Serves 4

  • 1 tsp olive oil

  • 1 cup diced zucchini

  • ½ cup minced onions

  • 1 clove garlic

  • 2 cups diced tomatoes

  • 2 tbsp chopped fresh basil leaves

  • ¼ tsp black pepper

  • 4 halibut steaks

  • 1/3 cup crumbled fat free feta cheese

Heat oil in small saucepan over medium heat.  Add zucchini, onions, and garlic.  Cook and stir until zucchini is tender, about 5 or 6 minutes.  Remove from heat and stir in tomatoes, basil and pepper.  Rinse fish and pat dry with paper towel.  Spray a medium baking pan with non-stick spray and place fish in pan.  Spoon in ¼ tomato-zucchini mixture over each fish steak.  Top with feta cheese.  Bake 450 for 12 to 15 minutes, depending on thickness of fish.  Serve immediately.
