Grilled Veggie and Chicken Salad

  • 1 Tablespoon Extra Virgin Olive Oil

  • ½ Teaspoon of Dried Herb Mixture

  • Crushed Red Pepper

  • ¼ to ½ Tablespoon of Balsamic Vinegar

  • Your portion of chicken marinated in fat free Italian dressing

  • ¼  cup of Eggplant

  • ¼ cup of sliced Yellow Squash

  • ¼ cup red and yellow bell pepper

  • ¼ cup of zucchini

  • ¼ cup of red onion

  • 1 ½ cup of greens

  • 1 Tbsp fat free parmesan

Gill chicken and cut into small pieces.  Mix first four ingredients in small bowl, set aside.  Place veggies in an even layer on a baking pan, brush with marinade and place on prepared grill.  Grill 5-7 minutes and cut into small pieces. Place all on greens and add fat free parmesan.
