Grilled Veggie and Chicken Salad

1 Tablespoon Extra Virgin Olive Oil

½ Teaspoon of Dried Herb Mixture

Crushed Red Pepper
-
¼ to ½ Tablespoon of Balsamic Vinegar

Your portion of chicken marinated in fat free Italian dressing

¼ cup of Eggplant
-
¼ cup of sliced Yellow Squash
-
¼ cup red and yellow bell pepper
-
¼ cup of zucchini
-
¼ cup of red onion
-
1 ½ cup of greens
-
1 Tbsp fat free parmesan
Gill chicken and cut into small pieces. Mix first four ingredients in small bowl, set aside. Place veggies in an even layer on a baking pan, brush with marinade and place on prepared grill. Grill 5-7 minutes and cut into small pieces. Place all on greens and add fat free parmesan.
